I was finally able to make some overnight oats last night. They’re actually pretty good other than the fact that I used plain Greek yogurt. That made them too tart for my taste so I had to add some Stevia to them which made a huge difference. When I make some more tonight I will be using vanilla Chobani yogurt now that Fred Meyer is now carrying it.
Here is the recipe that I used, it’s a slight variation from the one I found here:
- 1/4 C old fashion oats
- 1/4 C Greek yogurt
- 1/3 C whole milk
- 1 tsp Chia seeds
- 1/4 tsp vanilla extract
- 1/4 C berries
All you have to do is mix all of those ingredients in a mason jar or even a coffee mug wrapped up overnight and then you have a delicious breakfast waiting for you in the morning. Or a healthy snack for the afternoon. You are probably wondering why I put chia seeds in it. These seeds have been found to have huge nutritional benefits. They’re high in omega-3s, fiber and a few other things. For more info on chia seeds click here.
One of the great things about overnight oats is that you can easily change it up however you want it to be. You can use any type of milk if you don’t want to use whole milk. There’s so many flavors of yogurt to choose from. This recipe is easily doubled if you want a bigger helping of it. You also aren’t limited to just berries in it. You could also put say a banana or something in it. You can also put a lot more than 1/4 a cup of fruit in it. That’s all I put in because of my fructose intolerance.
